Originally
guachinches were the place where farmers, mainly from the north, sell
the wine they made themselves, along with some food that his wife
prepared in the kitchen of their house and all that was served in the
lower part of the house that was a garage that had been adapted a bit
and placed some tables and chairs. So, as you can imagine, it was
impossible to be more homemade.
Over time, the
guachinches developed and many of them began to resemble restaurants
more than their family origins. In fact, there is a debate on that
topic nowadays. However, although now many guachinches have already
lost their essence, they still are places where you can find Canarian
homemade food: escaldón (made with gofio), party meat (that is the
name), chickpeas, ribs with potatoes, house wine, grilled cheese,
goat meat ... at very affordable prices.
As a general
rule, the more lost a guachinche is, the better it is. To get to some
of them, you have to drive slopes where trying the second gear is
impossible, towards the heights of La Matanza, La Victoria, Santa
Úrsula ... Arriving there is the first prize, the food is the second
and generally the bill is the third prize.
